Fiano di Avellino D.O.C.G.
100% Fiano di Avellino
The wine is made from grapes of the same name, known by the Latin name of the Vitis Apiana, which is derived from bee, because the bees are particularly attracted by the sweetness of this grape. Straw yellow color, the nose expresses aromas of yellow fruit and toasted hazelnuts. The taste gives good acidity, balanced by good body and persistence. To pair with seafood, fish and white meat.
Mid October, grapes are selected in the vineyard and handpicked.
Soft pressing of whole grapes, maceration for a few hours, the fermentation is started with autochthonous yeast starter in stainless steel tanks at controlled temperature. Aging in the bottle for the next six months.
The vine is well adapted to different climates and soils. The best results come from clean, deep soils, rich in micro and macro elements, very fine and of volcanic origin like that to be found on the hills of Avellino.
